Role and Contribution
Participant 7 leads WP5 and contributes to the following main objectives of
the project:
- Combination of validated pathogen growth models with data on prevalence/concentration,
dose response and chill chain conditions for risk assessment with and without
SMAS application.
- Evaluation of the applicability and effectiveness of SMAS in real conditions
of meat distribution. Assessment of the industry acceptance of the TTI and
the concept of chill chain management.
- Evaluation of European consumer attitude on use of TTI and correlation to
quality.
Workplan
Role of Subcontractor
By policy of the company analyses involving pathogen are not performed in the
in house laboratory but in the subcontracted laboratory (University of Crete,
Laboratory of Bacreriology and Zoonoses) which supports the production unit
for such work. This will be done under supervision of the principal scientist
and the scientific team of the company involved in the project.
